Steak Sauce Recipes

Fancy a steak well we now sell a wide range of steaks on the website! How about adding a little extra interest with a homemade steak sauce? Here are a few of our favourites.

Sweet: Shallot and Red Wine

Ingredients:

2 fillet steaks
Salt and freshly ground black pepper to taste
1 x tablespoon oil
1/2 shallot, sliced
4 tablespoons balsamic vinegar
4 tablespoons dry red wine

Method:

  • Sprinkle salt and pepper over both sides of each steak.
  • Heat a frying pan over high heat. Add oil. Place steaks in hot pan, and cook for 4 minutes on each side. Remove from pan and discard the oil.
  • Return the pan to the heat. Add the shallot and cook and stir till softened and golden brown, (about 1 minute).
  • Add red wine and stir up any browned bits stuck to the bottom of the pan.
  • Reduce heat slightly, add balsamic and let the sauce reduce by about half.
  • Return the steaks to the pan for a few minutes, turning once. Remove steaks to two warmed plates, spoon sauce over each, and serve immediately.

Sharp: Zesty Citrus Steak Sauce

Ingredients:

2 fillet steaks
Salt and freshly ground black pepper to taste
60ml orange juice
60ml lemon juice
60ml brown sugar
60ml soy sauce
60ml white vinegar
2 tablespoons Dijon Mustard
3 tablespoons ketchup
2 tablespoons tomato chili sauce
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
1 teaspoon garlic powder

Method:

  • Sprinkle salt and pepper over both sides of each steak.
  • Heat a frying pan over high heat. Add oil. Place steaks in hot pan, and cook for 4 minutes on each side. Remove from pan and discard the oil.
  • Add all the sauce ingredients in a medium saucepan over a low heat
  • Heat until sugar is dissolved and sauce is uniform in consistency
  • Return the steaks to the pan for a few minutes, turning once. Remove steaks to two warmed plates, spoon sauce over each, and serve immediately.

Creamy: Steak Au Poivre with Dijon Cream Sauce

Ingredients:

2 x 450gram sirloin steaks
4 teaspoons coarsely ground black peppercorns
9 tablespoons Dijon Mustard
2 tablespoons olive oil
½ cup minced shallots
1 garlic clove, minced
1 cup tinned beef broth
¼ cup whipping cream
¼ cup brandy

Method:

  • Sprinkle steaks with salt and spread 2 tablespoons mustard on either side of each steak.
  • Press 1 teaspoon pepper on either side of each steak.
  • Heat the olive oil in a heavy large skillet over medium-high heat.
  • Add steaks and cook – about 5 minutes per side for medium-rare.
  • Transfer steaks to plate; tent with foil.
  • Add shallots and garlic to skillet; sauté 15 seconds.
  • Stir in broth, cream, then brandy and 1 tablespoon mustard.
  • Boil until thickened, 2 minutes.
  • Spoon over steaks.
