The humble chorizo sausage is one of those sausages that is just so so versatile. Because it is a cured meat it means it can be eaten hot and cold, sliced, grilled and fried. You can do virtually anything to it and add it to virtually anything and it will spice up any dish (literally as it has quite a fiery taste, down to the paprika and chilli in it).
As we write this it a beautiful summers day so it is hard to imagine writing about a casserole or hot pot, so we have done some hunting around and found three delicious salads that our chorizo sausage is just perfect for!
1. Spinach, Chorizo and Halloumi Salad.
Found on the UK TV website, this salad is packed with goodness – spinach, garlic, asparagus and halloumi, blended with olive oil and balsamic vinegar and of course spicy chorizo sausage to finish the dish off.
2. Spicy Chorizo Cous Cous Salad
This dish is a total meal in itself and great for premaking for work lunches. It has couscous, chorizo, pepper garlic and tomato, topped with parsley and basil and finished with lemon juice, olive oil and black pepper.
3 . Warm Avocado with Spicy Chorizo Salad
This has the beauty of being a light salad but also a warm dish too and ready in 20 minutes. Simply add avocado to olive oil and chorizo. And toss in some baby leaf salad and finish with everyone’s favourite balsamic vinegar.
