Blood Moon Lamb Rack


  • Racks of lamb (4 chops)
  • 1-2 tbps of Dijon mushroom
  • 3-4 big potatoes (enough for making 2 scoops)
  • 1-2 slices of cooked beetroot.

Make the crust – Blend ingredients until well mixed

  • 4 tbsps of Panko Breadcrumbs
  • Small handful of parsley
  • 1 clove of garlic (whole)
  • 2 tbsps grated parmesan
  • 2 tbsps of Dandelion Syrup (sold in shop)
  • Pinch of salt and crushed black pepper

Make the chilli, tomato, mushroom and Dandelion sauce

  • 2 tbsps of Dandelion Syrup
  • 4 tbsps of Ketchup
  • 1 tsp of sweet chilli sauce
  • 1-2 mushroom (Sliced)
  • 1 tsp of butter
  • Pinch of salt and crushed black pepper
  • 4 tbsps of water


1. Preheat the oven to 200c fan.

2. Cook potatoes in the boiling water and at the same time boil the beetroot in a separate pot.

3. Wait until potatoes and beetroot are ready, peel the skin of potatoes and beetroot off and mash them together. – You only need 1-2 slices of beetroot to color potatoes. (Beetroot will get softer when it is ready. Usually will take about 30 mins for medium size)

4. Mix butter and milk as you desire in to beetroot mashed potatoes and set aside.

5. Make the crust – Blend ingredients until well mixed.


6. Sear Lamb in a pan with a little oil for 5 – 10 minutes.

7. Remove from heat onto a work surface or plate.

8. Spread mustard on fat side of Lamb.

9. Coat breadcrumb mix onto fat side of lamb on top of the mustard, making sure to cover the whole area of fat with the breadcrumb mix

11. If you have a temperature probe, cook to 63c for medium or 70c for fully cooked

11. 5 mins before lamb is ready, prepare your sauce by mixing all ingredients together in the saucepan and heat them up for 5 mins or until reduced by half.

12. Allow lamb to rest for at least 5 mins before cut it.

13. Place beetroot mashed potatoes in an ice cream scoop and gently transfer it to serving place. Cut racks of lamb in half and place it on top of the sauce.
